Here is another recipe with my favorite combination of Ragi and Oats, my earlier post with these ingredients is Porridge and Idli. My little one likes pancakes , french toast and chapathi in her lunch box. So I always try different versions of pancakes and Rotis for her. No pre-prep is required for these Pancakes, so you can make them for breakfast on a lazy weekend or for kids lunch box . I tried egg less this time adding ground flax seeds mixed with warm water. For extra protein you can use egg white/whole egg.
Ingredients:
- Ragi flour – ½ cup
- Oats – ½ cup
- Milk – ¾ cup
- Baking powder – 1tsp
- Ground Flax seeds – 1 tbsp
- Warm water – 2 tbsp
- Brown sugar / Jaggery – 1 tsp
- Oil – 1 tbsp
Method:
- Soak Ground flax seeds in warm water for 10 min.
- Take all other ingredients except baking powder in blender jar and keep them aside for 10 min
- Add Flax seed liquid to blender jar with other ingredients and blend them until batter is smooth
- Add baking powder to the batter and mix well
- Heat non stick griddle on medium heat and pour small amounts of batter.
- Lightly spray oil over pancake and cook around 1 minute or until the bubbles appear. Flip with a spatula and cook second side about 20 seconds.
- Serve immediately with honey or almond butter or cinnamon sugar or any sweetener of your choice.
Note:
- If you are using egg whites(2), eliminate warm water and you can still use ground flax seeds.
